February…forever linked to Valentines Day and love. But let us not forget that this year the second month of 2016 has more to offer. Presidents Day falls the days after,  making it a three day weekend for some. Mardi Gras is February 9th, and if you’re anywhere near New Orleans you really need to experience it just once. I have had the opportunity to attend Mardi Gras in both New Orleans and Rio de Janeiro and the two are uniquely different.

Oh,  and did I mention it’s leap year this year? Yep 29 days does February have!

With all the sweets surrounding both Valentines Day and Mardi Gras, I always come back to familiar favorites. Below is my Cream Cheese Pound Cake recipe. Consider drizzling it with pink or red glaze. Or perhaps a strawberry glaze…the possibilities are endless.

Cream Cheese Pound Cake

 

 

Favorite Recipes – Jamie Salisbury

 

3  Sticks Butter

3 cups Sugar

1 package – 8 ounces Cream Cheese

1 dash Salt

6 Large Eggs

1 ½ Tsp Vanilla

3 cups Cake Flour (Sifted)

 

Cream together margarine, sugar and cream cheese until light and fluffy.  Add salt and vanilla flavoring.  Beat well.  Add eggs, one at a time. Beat well after each addition of egg.  Stir in cake flour by hand and blend well but do not beat.  Spoon mixture into a 10-inch tube pan that has been greased and floured. (I user bakers secret which have both in a spray together).  May also be baked in a 13x9x2-baking dish.  Bake at 325* for about 1 ½ hours.  Toothpick test and watch the last half-hour of cooking. Do not overcook.
